青团通常都是豆沙做馅， 去年上海杏花楼推出了新品种 - 咸蛋黄肉松青团， 变成了网红青团。据报道这个新品种在清明期间竟要排队6小时。。。
还没尝过杏花楼的咸蛋黄肉松青团， 好奇怎么个好吃法，网上 查了几个配方， 买齐材料， 试做开始：
配方：
· 糯米粉 (sweet rice flour)： 1 lb
· 艾草粉 (mugwort powder)： 10 g
· 糖 （suger): 1cup
· 水 (water)： 1.5 cup
· 肉酥 (pork sung)： 1 cup
· 咸蛋黄 (salted duck egg yolks (cooked))： 1 bag/12 egg yolks
· 油 （cooking oil): 2 TBSP
做法：
· 将糯米粉， 艾草粉， 糖在容器中拌匀， 慢慢加水， 揉成面团
· 将咸蛋黄捏碎拌入肉酥加油拌匀， 然后搓成丸子/ 馅
· 取适量艾草糯米面团， 像包汤团那样包入咸蛋黄肉酥馅， 搓圆
· 蒸锅加水烧开， 放上包好的青团蒸10-15分钟
· 开吃
味道非常好， 欲罢不能。。。
